Ridiculously Simple Oyako-don: Chicken and Egg Rice Bowl

My husband loves this oyako don. It's really simple to make!

Ingredients: 1 generous serving

50-80 g
1/2 small
Dashi stock
50-60 ml
Soy sauce
2 tablespoons
1 tablespoon
1 tablespoon
1 teaspoon


1. Cut the chicken into bite-sized pieces and slice the onion thinly.
2. Combine the dashi stock, soy sauce, sugar, mirin and sake and bring to a boil. Add the onion and chicken and simmer. When the onion is transparent and the chicken is cooked through it's good to go.
3. Swirl in the beaten egg, put a lid on and cook until the egg looks good (soft set is the best). Turn the heat off.
4. Pour this over rice in a bowl, garnish with chopped green onion - and the Ridiculously Simple Oyako Don is done!

Story Behind this Recipe

I've been making too many western style dishes like pasta and rice omelette so I thought I should make a rice bowl once in a while, and made this! It's a recipe I've been making since I lived with my parents.
