Cut the chicken into bite-sized pieces and slice the onion thinly.
Combine the dashi stock, soy sauce, sugar, mirin and sake and bring to a boil. Add the onion and chicken and simmer. When the onion is transparent and the chicken is cooked through it's good to go.
Swirl in the beaten egg, put a lid on and cook until the egg looks good (soft set is the best). Turn the heat off.
Pour this over rice in a bowl, garnish with chopped green onion - and the Ridiculously Simple Oyako Don is done!
Story Behind this Recipe
I've been making too many western style dishes like pasta and rice omelette so I thought I should make a rice bowl once in a while, and made this! It's a recipe I've been making since I lived with my parents.
If you like plenty of sauce with your donburi (rice bowl), make a generous amount of the ★ dashi stock. You can just as much as you like of the chicken and onion, so don't sweat the details, just make it!
