Oil-Free and Easy Okara Banana Muffins

Try these fluffy muffins packed with nutrients from okara and bananas for breakfast or a snack.


100 g (net weight without peels)
1 tablespoon
Fresh okara
100 g
60 to 70 g
◎ Cake flour
100 g
◎ Baking powder
4 g
◎ Baking soda
2 g
Chocolate bar or chocolate chips
to taste


1. Mash the banana, add the rum, and mix. Combine the egg and sugar, add the banana and okara, and mix well. Preheat oven to 170℃.
2. Put the ◎ ingredients in a bowl, whisk well, then add the wet ingredients from Step 1, and mix until even. Mix in chocolate chips, if desired.
3. Pour into molds, bake for 25 minutes, then they're done.

Story Behind this Recipe

I finally was able to get some uncooked okara, so I'm posting this recipe as record for myself. Even with okara, they turn out fluffy and delicious.
