Cebu-Style Chicken Skewers with Vinegared Marinade

The key to the meat's softness is the vinegar marinade! Enjoy with a spicy Asian-style BBQ sauce. You can modify this by using pork meat or adding vegetables to your liking.

Ingredients: 3-4 servings

Chicken meat (whatever you like)
200 g
1/4 large one
2 large cloves
Chili peppers (as desired)
1 tablespoon
90 ml (6 tablespoons) or as desired
★Soy sauce
1/2 teaspoon
3 tablespoons


1. Cut the chicken into bite-sized pieces, and mince the onion and garlic. Mix together the ★ ingredients, and marinade all the ingredients together for at least 2 hours.
2. Remove the chicken only and pierce with damp skewers. Place on a baking pan covered in aluminium foil.
3. Take the ★ marinade, put it in a pot, and boil it about halfway down.
4. Pour the sauce from the previous step over the meat, and cook by grill, frying pan, over toaster, or a 200°C preheated oven. When necessary (like when cooking in a frying pan), occasionally turn over to allow the chicken to cook through evenly and thoroughly.
5. Today I used chicken breasts and liver and baked in the oven. I used long BBQ skewers.
6. If you have the sour and spicy vinegar they have in Cebu, you can use that. You can also use the pickled garlic and chili peppers.

Story Behind this Recipe

This is a great barbecue marinade that's popular in Cebu. You're supposed to use something called banana ketchup, but that's a bit difficult, so I used tomato ketchup in my own version.
