Japanese Lobster Style? Ama Ebi (Sweet Shrimp) Miso Soup

Shrimp heads are full of delicious umami. Before you throw them away, please try this recipe!
You can make miso soup that's as delicious as the famed Ise-ebi (Japanese lobster) from the Ise region!!

Ingredients: 2 servings

Ama-ebi (sweet shrimp) heads
About 20 heads
3 tablespoons
Dashi stock
2 cups/400 ml
To taste


1. This is a pack of sashimi-ready sweet shrimp. Turn the shrimp out into a sieve and wash well under running water and drain.
2. Throw the heads into a pot. Peel the bodies and eat as sashimi, in salads, or however you like.
3. Put the dashi in a pot and bring to a boil. Skim off any scum that rises to the surface. After simmering the dashi for a while, add shrimp heads. Tap them with the back of a ladle and extract the umami (avoid crushing a few of the shrimp heads, which will be used to decorate the soup when you serve it). Dissolve miso to finish.
4. Serve in bowls. Garnish with plenty of chopped scallions and enjoy!
5. I used the shrimp bodies in a salad.

A lot of my friends who are mothers tell me that they've never bought sweet shrimp before, so I shared this recipe and they loved it. So I decided to upload the recipe.
