Chinese Chive Egg Drop Miso Soup

This is the miso soup my mother has prepared for me since my childhood. It's aromatic of the leeks and with the fluffy swirls of the eggs.

Ingredients: 4 servings

Chinese chives
1/2 bunch
Dashi stock
600 ml
Miso (any type)
to taste


1. Cut the Chinese chive into 2 cm length. Pour the dashi stock into a pot, add the Chinese chives and simmer until soft. Add the miso and boil. Swirl in the beaten egg slowly little by little, and immediately turn off the heat. Cover with a lid and let cook.
