Vegetarian KFC Biscuits

Vegetarian KFC Biscuits

These scones are like the ones you get at KFC, but are vegetarian. There's only a small amount of oil in them but I've managed to make them rich and flavorful with some experimenting.

Ingredients: Ten 6 cm diameter scones

A) Bread (strong) flour
100 g
A) Cake flour
100 g
A) Baking powder
10 g
A) Sugar beet (sugar)
20 g
B) Almond powder
50 g
B) Canola oil
10 g
C) Tofu
70 g
C) Soy milk
50 g
C) Vanilla Essence
to taste


1. Preheat the oven to 200°C. Mash the tofu until it becomes a smooth paste and set aside.
2. Put the B) ingredients into a food processor and blitz until well blended.
3. Add the A) dry ingredients and blitz until blended with the oil and the mixture becomes crumbly.
4. Add the C) ingredients and blitz in short bursts. Once the mixture more less gathers together, remove from the food processor and place on a floured cutting board.
5. (Since the dough only needs to be more or less gathered together in the beginning, it will be crumbly and fall apart easily, but just use your hands to push it all together into one lump.) Use a rolling pin to roll it out until about 1.5 cm in thickness. Fold it into layers and then roll out once again to 1.5 cm. Fold it into layers again and then this time roll it out until 2.5 cm thick.
6. Use a cup (or something similar) to cut out the shapes, bake in the oven for about 30 minutes, and then they're done.

Story Behind this Recipe

I became a vegetarian but I really wanted to eat biscuits from KFC, so I made this.
By the way, 1 scone (40 g) is about 127 calories.
