Thai-Style Stir-Fried Udon Noodles

An udon noodle dish flavored with fish sauce and lemon. Please add your favorite vegetables.

Ingredients: 1 serving

Udon noodles
1 pack
Thinly sliced pork belly
60 g
Onion or green onion
1/2 a small onion
Cherry tomatoes
Chinese chives
5 to 10 cm
Ginger, finely minced
1/2 piece
Garlic, finely minced
1/2 clove
Fish sauce
To taste
Lemon juice
from 1/4 of a lemon


1. Cut the bag the udon noodles are packed in a little bit, and microwave for 30 seconds. Then, place the noodles in a sieve and rinse under running water to remove any surface stickiness.
2. Heat some oil in a frying pan and stir-fry the garlic and ginger until they are fragrant. Add the pork and season lightly with salt and pepper.
3. When the pork is cooked, add the thinly sliced onion and stir fry until it's transparent. Add the cherry tomatoes.
4. Add the chives and udon noodles and stir fry. Add the fish sauce and lemon to finish.

Story Behind this Recipe

I made some stir fried udon when I was visiting friends in Bangkok. They were out of soy sauce so I tried using Thai fish sauce instead. Although people in Bangkok use limes, lemon is a fine substitute.
Now I'm very fond of stir fried udon with nam pla.
