Izakaya-Style Okara, Vegetable, Mayonnaise and Miso Salad

The okara based salad I had at an izakaya (Japanese gastropub) was delicious, so I tried to recreate it from memory. It was a big hit!

Ingredients: 4 servings

Fresh okara
about 80 g
Carrot
45 g
Cucumber
1/2
Ham
35 g
◎ Rice vinegar
1/2 teaspoon
◎ Awase miso (blended red and white miso)
1 heaping teaspoon
◎ Mayonnaise
4 heaping tablespoons
◎ Soy sauce
1 teaspoon

Steps

1. Peel the carrots and slice thinly using a slicer (mandoline). Boil briefly in salted water and drain.
2. Sprinkle the cucumber with salt and roll firmly on a cutting board. Wash under running water and wipe well, then finely julienne. Julienne the ham also.
3. Mix the ◎ ingredients together. Add the fresh okara.
4. Done!

I saw some okara at the tofu store, so I thought I'd turn it into a quick salad first.
