Crisp and Fluffy Chocolate Doughnuts

These chocolate doughnuts are crispy on the outside.

Ingredients: Makes 10 doughnuts

Unsalted butter
30 g
90 g
1 egg
2 tablespoons (30ml)
Skim milk powder
10 g
Cake flour
200 g
Cocoa powder
16 g
Baking powder
1 & 1/2 teaspoons
Frying oil
as needed


1. Combine the cocoa powder, flour, baking powder and powdered milk and sift.
2. Combine butter (brought to room temperature) and sugar, and cream. Now, add the egg and pour in the milk in that order and mix well.
3. Add Step 2 to the Step 1 bowl, and then mix well with a spatula. When the dough comes together, form the dough into a ball with your hands and then chill in the refrigerator for 1 hour.
4. Take out the dough and put it on a countertop dusted with flour. With a rolling pan, roll out the dough to about an 8 cm width and cut with a cookie cutter.
5. Deep fry at about 335℉ (170℃) to 350℉ (180℃).
