This is a very delicious 'kamo-nanban' duck soba noodle dish with the rich flavors of duck. The duck pairs well with the sweetness of the leeks.
I wanted to enjoy kamo-nanban soba noodles and sake at home.
Use kudzu starch if available. If not, you could substitute with katakuriko or cornstarch. If you can't obtain frozen soba noodles, use the dried variety. This dish is delicious after a round of sake.
