Kamo-nanban Soba Noodles with Leeks

Kamo-nanban Soba Noodles with Leeks

This is a very delicious 'kamo-nanban' duck soba noodle dish with the rich flavors of duck. The duck pairs well with the sweetness of the leeks.

2 portions
Duck breast or leg meat
1/2 (about 100 g)
The white part of a Japanese leek
Spring onions
Concentrated dashi stock (bonito and kombu)
600-700 ml
○ Usukuchi soy sauce
3 tablespoons
○ Mirin
3 tablespoons
○ Sake
2 tablespoons
Kudzu starch or katakuriko
As required
Soy sauce

Ichimi spice or shichimi spice
To taste

1. Cut the leek into 5 cm. Finely chop the spring onions.
2. Cut the duck into bite-sized portions.
3. Put the duck into a bowl and add soy sauce. Rub well and leave for a while.
4. Grill the leek on a griddle until well charred.
