Simple Potato Bread

You can bake these in 30 minutes without proofing, so you can even make them for breakfast. It's a quick recipe that'll give you rolls that are crispy on the outside and chewy on the inside. [There's no need for eggs and oil]

Ingredients: 8 rolls

★Instant mashed potato flakes
3 tablespoons (35 g)
★Boiled water
100 ml
Bread (strong) flour (you can also mix in a bit of whole-wheat flour)
170 g
Baking powder
2 teaspoons
Salt
1/2 teaspoon
Parmesan cheese (optional)
3 tablespoons
Water
50 ml
Rolled oats (for topping)
a small amount

Steps

1. Preheat the oven to 200°C.
2. Mix the ★ instant mashed potatoes and boiled water well. (You can substitute with mashed potatoes 100 g + 1 tablespoon of milk.)
3. Add the remaining ingredients except for the topping in the order from the list to Step 2. Knead until the mixture becomes a soft earlobe-like consistency.
4. Divide the dough into 8 portions, and roll into balls. Dab on a bit of water and sprinkle the surfaces with oatmeal to your liking.
5. Reduce the oven temperature to 180°C, and bake for about 15 minutes until they become crispy and golden brown.
6. They're great when fresh out of the oven, so warm them up in a toaster oven when cooled. They'll become crispy and tasty again!
7. Variation 1: [Butter flavour] Add 1 tablespoon of butter instead of cheese.
8. Variation 2: Add 1 egg to make them even fluffier. Reduce the amount of water by 1 tablespoon.
9. Variation 3: [Kabocha squash] This is a variation by Cookpad user "Yosshi". She added kabocha squash flakes, butter, and poppy seeds.

Story Behind this Recipe

I made these rolls with some hints from Irish soda bread. A lot of these recipes use eggs and taste more like muffins, but I don't like them so much, so I modified the recipe and made it like bread.
