Salmon, Leek, and Green Onion Fried Rice

Use leftover rice and leftover salmon... an easy fried rice made in no time.

Ingredients: 4 servings

Cooked salmon (salmon flakes are OK)
1 piece
Japanese leek
1 stalk
Green onion or scallion
4 to 5 stalks
Plain cooked rice
360 ml uncooked
Dashi stock granules
To taste
Vegetable oil
1 tablespoon


1. Finely break up the salmon. Chop up the leek and green onion.
2. Add the eggs to the rice. Microwave the rice first if it's cold.
3. Mix the rice and egg together well with a ride paddle.
4. Heat oil in a pan, and quickly stir fry the egg-rice over high heat.
5. When the rice grains have separated, add the salmon and leek and continue stir frying. Season with dashi stock granules. Taste, and adjust the seasoning.
6. Transfer to serving plates, scatter with some chopped green onion, and it's done.

I make it with things I always have in the refrigerator, so it doesn't take any extra effort or money to make.
