Rich Smooth Flan-like Chinese Apricot Kernel

This apricot kernel flour isn't watery at all. It's super rich.

Ingredients: 4 servings

Chinese apricot kernel flour
3 tablespoons
Heavy cream
200 ml
300 ml
White sugar
3 tablespoons
Powdered gelatin, water
5 g & 50 ml
Ice water


1. Dissolve the powdered gelatin into 50 ml of water.
2. Put cream, milk, sugar, and Chinese apricot kernel flour in a pot and mix it while you heat it over low heat. (*Make sure it doesn't boil!) When the sugar has dissolved and it starts to steam, turn off the heat and then mix in the dissolved gelatin.
3. Once it's well mixed, put the pot in a bowl of ice water and mix the batter around to expel the heat. Afterward, just pour it into your desired container, chill in the refrigerator and you're done!
