Matcha Cake Sticks

I used a square pan to bake matcha cakes topped with sweet black beans, then chopped them into sticks.

Ingredients: 18 cm square pan

Granulated sugar
50 g
20 g
50 g
Cake flour
50 g
Almond flour
50 g
5 g
Baking powder
1/2 teaspoon
Candied black beans
As you like


1. Bring eggs to room temperature. Combine the cake flour, almond flour, matcha, and baking powder and sift. Microwave the butter (roughly 1 minute) to melt.
2. Beat in the eggs. Add granulated sugar and honey. Whisk well.
3. Sift in the dry ingredients and stir until it's not floury. Add the melted butter in small batches and whisk.
4. Pour the mixture into a square tin lined with parchment paper. Smooth out the surface and top with candied black beans. Bake in 170°C (338°F) for 20 minutes.
5. Remove from pan when it's slightly cooled down. Chop into desired sizes.

Story Behind this Recipe

I had some black beans that were sitting in the fridge, so I used them to decorate matcha dough and baked into a cake.
