Carrot Paste

I always make a large batch of carrot paste whenever I have delicious carrots on hand.

Ingredients: 8 cups' worth

1 teaspoon
as needed


1. Peel the carrots and roughly chop them. ※ If you are using organic vegetables, clean off the dirt and use them without peeling.
2. Heat butter in a heavy pan. Lightly sauté the carrots and coat with butter.
3. Add enough water to cover the carrots. Add salt and simmer over very low heat for 1-2 hours. The sweetness of the carrots is brought out by cooking slowly over low heat.
4. Once the carrots have cooled, put them into a blender and pulse until smooth.

I always make this whenever I buy delicious carrots. I revised a version of paste for potage with onions that I used to make.
