Carrot Madeleines

These are sweet, moist, and fluffy madeleines.

Ingredients: 10 to 12 mini madeleines

Carrot paste
30 g
Cake flour
60 g
Unsalted butter
60 g
Sugar (light brown sugar)
60 g
Egg (medium)
1 (50 to 60 g)
Baking powder
1/2 teaspoon


1. ■Preparation: Melt the butter in the microwave. Grease the madeleine molds with some butter, dust with flour, and let cool.
2. In a bowl, beat the egg. Add the sugar and whisk until it has thickened. Add the carrot paste a little at a time, mixing as you go.
3. Sift the flour and baking powder into the bowl and mix together.
4. Add the melted butter and mix well. Let chill in the refrigerator for about 1 hour.
5. Scoop the batter into the molds. If you fill them too high, they will rise over the tops, so be careful.
6. Heat the oven to 190℃ (a bit higher if using an electric oven) and bake for 20 minutes (or until a skewer or toothpick inserted comes out clean).
