I bought potatoes in bulk since they last for a long time. But it was too many. When you have extra potatoes at hand, try this potato salad with basil. Red kidney beans and chickpeas add the color to the salad and make it more nutritious.
Cook the potatoes in the microwave for about 15 minutes at 500w.
Once the potatoes are cooked, peel and quarter them.
Boil the chicken and cut into bite-size pieces.
Cut the bacon into bite-size pieces.
Cook the bacon in a frying pan.
Finely cut the basil and combine with all the ◎ marked ingredients. (You could also use a food processor.)
Combine the basil sauce with the potatoes and chicken.
Add in the cooked bacon, red kidney beans and chickpeas.

Since I bought too many potatoes.
Instead of mashing the potatoes, cut each one into about 4 big pieces and mix with the flavoring ingredients. I think it tastes more refreshing like this. I used bacon this time but you can also use sausage. Please choose whichever one you like.
