Chicken and Potato Salad with Basil

I bought potatoes in bulk since they last for a long time. But it was too many. When you have extra potatoes at hand, try this potato salad with basil. Red kidney beans and chickpeas add the color to the salad and make it more nutritious.

Ingredients: 6 servings

Potatoes

Chicken breast
1 large
Bacon (block)
100g
Red kidney beans
50g
Chickpeas
50g
◎Basil
6 leaves
◎Mayonnaise
40g
◎Heavy Cream
40g
◎Salt and pepper
a small amount
◎Nutmeg
a small amount

Steps

1. Cook the potatoes in the microwave for about 15 minutes at 500w.
2. Once the potatoes are cooked, peel and quarter them.
3. Boil the chicken and cut into bite-size pieces.
4. Cut the bacon into bite-size pieces.
5. Cook the bacon in a frying pan.
6. Finely cut the basil and combine with all the ◎ marked ingredients. (You could also use a food processor.)
7. Combine the basil sauce with the potatoes and chicken.
8. Add in the cooked bacon, red kidney beans and chickpeas.
9. Finished.
