Sweet and Spicy Simmered Shishito Peppers and Jako Sardines

This is not just for bentos. Lovers of sweet and spicy flavors will become addicted. It's great to enjoy with beer.

Ingredients

Shishito peppers
about 30 (2 packs)
Chirimen jako
3-4 tablespoons
Mirin
1 tablespoon
Soy sauce
2 teaspoons
Dashi stock granules
1/3 teaspoon
Water
100ml

Steps

1. Rinse the shishito peppers and slice diagonally in the center (this allows the flavor to seep in).
2. Add vegetable oil to a pan and heat. Cook the peppers on high heat. Turn off the heat when the peppers are roasted.
3. Add the water, dashi granules, mirin, and soy sauce and turn on the heat again. Reduce the liquid by half, then add the jako sardines. When the liquid evaporates and simmers down, it's finished.
