Superb Old-Fashioned Matcha Doughnuts

These are a replication of the doughnut chain Mr. Donut's "Old Fashioned Match Doughnuts." They are soooo delicious.

Ingredients: 10 doughnuts

●Cake flour
195 g
●Katakuriko
20 g
●Baking powder
1 1/2 teaspoons
●Skim milk powder
6 g
● Matcha powder
7 g
Unsalted butter
30 g
Sugar
80 g
Egg
1 egg
Milk
1 tablespoon (15 ml)
Frying oil
as needed

Steps

1. Combine all of the ingredients marked with a ● and sift.
2. Place the butter in a bowl and whip with a whisk. Then, add the sugar and mix together thoroughly. Add the egg and milk, and whisk.
3. Add the Step 1 dry ingredients to Step 2, and gently fold together to combine. The wet ingredients should be evenly distributed throughout the dry ones, so that the mixture as a whole has an even, moist consistency. Gather together into a ball and rest in the refrigerator for 1 hour.
4. Remove from the refrigerator, and roll out to 8 mm thick.
5. Use a cookie cutter to cut out shapes, and then deep-fry in oil at 335℉ (170℃) to 350℉ (180℃). When you bite into the finished doughnuts, the inside should be bright green.

Story Behind this Recipe

I saw a poster advertising Mr. Donut's "Old Fashioned Matcha Doughnuts" and got the urge to try making them myself.
