Drizzle the sushi vinegar over the cooked rice and mix well. Avoid mashing the rice grains.
Prepare the fillings. Slice the onion, rinse and drain. Slice the avocado and sprinkle lemon juice (not listed). Mix the ingredients for the mustard mayonnaise. Arrange other ingredients as necessary.
Spread the sushi rice from Step 1 on the nori sheet evenly.
Lay the fillings lengthways, slightly below the centre.
Roll up the sushi with a sushi mat, leaving a 1 cm border on top (this is the flap to bring the roll together).
Roll and adjust the shape.

I am bored of making the same thing again, so this year I set my theme for my ehoumaki as lucky colours. I should be super lucky...
Do not use too much fillings or it will be very difficult to roll. This one big sushi roll feeds two people easily.
