Stir-Fried Udon Noodles with Miso Sauce

It's a comforting stir-fried udon noodle dish.

Ingredients: 1 to 2 servings

Minced ginger
1 scant teaspoon
as much as you like
Thinly sliced pork belly
100 g
1/2 medium
1/2 medium
3 leaves
Udon noodles
1 serving
Green onions or scallions
2 stalks
○ Miso paste
1 tablespoon
○ Sugar
1/2 tablespoon
○ Soy sauce
1/2 tablespoon
○ Sake
1/2 tablespoon
Salt and pepper
To taste
Vegetable oil
As needed


1. Cut the pork into 3-4cm pieces. Heat vegetable oil in a pan and cook the ginger and doubanjiang. Once fragrant, add the pork and cook until no longer pink. Transfer the pork to a plate.
2. In the same pan, cook the sliced onions and sliced carrots.
3. Add the cabbages (cut into 4-5 cm pieces). Separate the noodles and add to the pan.
4. When heated through, return the pork to the pan and add the scallions (cut into 3-4 cm pieces).
5. Combine the ○ marked ingredients and add to the pan. Coat the noodles well with the sauce.
6. Season with salt and pepper and you're done.

I came up with this seasoning mixture since I didn't have okonomiyaki sauce or kimchi sauce.
