Dorayaki Cream-Filled

Soft and fluffy dorayaki filled with whipped cream and tsubu-an.

Ingredients: serves 6

Homemade Pancake Mix

1 tablespoon
Vegetable oil
1 tablespoon
150 ml
Heavy cream
100 ml
Boiled adzuki beans, canned
1 can (210 g)


1. Add the honey, vegetable oil, and eggs into a bowl and mix well with a whisk.
2. Add milk and mix well. Then add the Homemade Pancake Mix and mix. Don't knead the mixture.
3. Heat an electric griddle to 140℃. Use a ladle to spread the mixture over the griddle. Once the top layer starts to bubble turn over and lightly cook.
4. Once it's cooked, set it on top of a kitchen towel. Be sure not to let them overlap with each other. Place a tightly wrung towel on top to allow it to become moist.
5. Put the heavy cream into a bowl and whip until foamy. Add the adzuki and mix with a rubber spatula.
6. Cool the adzuki cream mixture from Step 5, then place in between the pancakes you made in Step 4 and it's complete.

Story Behind this Recipe

Cream-filled dorayaki is the staple omiyage of a certain town in Miyagi Prefecture. I always sent them as gifts, but I wanted to eat it as well.
