Fluffy Kiwi Madeleine

The fluffy madeleine and the sour kiwi go really well together! This is a delicious madeleine.

Ingredients: 9

Cake flour
110 g
Butter (or margarine)
50 g
70 g
50 ml
Baking powder
1/2 tablespoon


1. Preparation: Chop the kiwi into pieces. Sift together the cake flour and baking powder.
2. Cream the butter in a bowl, add the sugar in 3 ~ 4 batches, and mix well.
3. Add the beaten egg, milk, and sifted dry ingredients to Step 2 in that order, and briefly mix with a spatula. When mixed, add the kiwi.
4. Pour the Step 3 mixture into paper cups or aluminium cups, and bake in the oven for about 20 minutes at 180℃.

Story Behind this Recipe

Lots of kiwifruit was given to us as a gift. I was thinking about what I could make with it except for jam, and I tried adding it to madeleine. The sourness of the kiwi goes well with it.
