Madeleine for Those with Egg Allergies

This is a snack for my son who has allergies.

Ingredients

Pancake mix
200g
Milk
150ml
Honey
1 tablespoon
Lemon
1/2
Butter
1 tablespoon

Steps

1. Melt the butter. Preheat the oven.
2. Grate lemon zest and add only the yellow zest. Squeeze the juice and add.
3. Combine all of the ingredients.
4. Pour into a mold, bake for 15 minutes at 355°F/180℃. Adjust to suit your oven.

Story Behind this Recipe

When I bake normal madeleines, I usually add potato, tomato, lemon, or vegetable juice, but no egg, while checking the instructions on the pancake mix packaging.
