Tofu and Black Tea Cake in a Rice Cooker

Tofu and Black Tea Cake in a Rice Cooker

This is one of my favorites from my tofu cake series, which you can easily make in a rice cooker. It's a black tea cake mixed with tea leaves. It's also tasty if your pour some maple syrup on top.

Ingredients: 5 rice cooker cups capacity

Pancake mix
200 g
160 g
Black tea leaves
1 ~ 2 tablespoons
3 tablespoons
Vegetable oil
1 tablespoon
Vanilla extract
as needed

1. Mash the tofu with a whisk, and mix until smooth. Add the egg, and continue mixing.
2. Add the vegetable oil and milk, and mix. Add the black tea leaves, and continue mixing.
3. Sprinkle with vanilla extract, and mix.
4. Mix in the pancake mix.
5. Lightly grease the rice cooker bowl with vegetables oil (not listed), and pour in the batter. Flatten it down a little bit, and press start.
6. Done. Insert a bamboo skewer to check if it's cooked through. I baked it 2 times. Letting it cool in the rice cooker keeps it moist. (It takes a while).
7. The bottom look like this. It's chewy because of the tofu!!

Story Behind this Recipe

I made this to test out tofu cakes.
