'Kuromame' Black Soy Beans Made in a Pressure Cooker

Cook black soy beans easily by using a pressure cooker. If you use this method, there's no way you can fail! The ones sold in stores are way too sweet, so I make these mildly sweet for my family.


300 g
800 ml
150-200 g
◎Soy sauce
1 tablespoon
a scant 1 teaspoon


1. Combine the ◎ ingredients, turn on the heat, and cook until the sugar has dissolved. Thoroughly wash the kuromame and cover with the ◎ mixture overnight.
2. Add Step 1 to the pressure cooker, cover with the lid, and turn the heat to high. When pot begins to shake, lower the heat and steam for 20 minutes. Stop the heat and let cool.
3. They're done.
4. Letting the beans sit in the broth for a short time allows for the flavors to blend together and the beans will become nice and plump.
