Make the body
Attach two marshmallows with icing to make the head and body. Warning - if the icing is too stiff or too soft, it's hard to attach the marshmallows!
Make the hat
Using an icing bag filled with icing, pipe the icing around a mini-marshmallow. Have some silver dragées ready in a plate and roll the iced mini marshmallow around in it.
Attach the hat and make the facial features with icing. Attach the decorative accessories.
The face is drawn on with icing + food coloring (black). See Step 19 for instructions for how to make an icing bag.
Make the nose by mixing food coloring (red) with marzipan, and attach.
Pipe some icing around the neck, and wrap a scarf around before the icing dries and tie it up. The scarf is made by ripping ribbon shaped gummies into strips. You could use marzipan or icing instead. See Step 20.
To make an icing bag: Cut kitchen parchment paper into 8 cm x 15 cm rectangles, roll around as shown in the photo and secure with a staple. Fill with icing and cut off the tip.
I shredded ribbon shaped gummies into thin strips. They're so colorful and cute!
Story Behind this Recipe
I build a gingerbread house every year! And I decorate with marshmallow snowmen. My daughter upgraded the look of the snowmen. She says this year she really worked on the facial features, so I put it all together on one page.
