Sweetly Simmered Sole

Sole meunière also tastes good but how about trying it simmered in a sweet and salty sauce? It goes well with freshly cooked white rice!


1 thumbtip's worth
A) Soy sauce, sake
2 rounded tablespoons each
A) Sugar
2-2.5 tablespoons
A) Mirin
2 tablespoons
A) Water
1 cup (enough to cover the fish)


1. Cut the fish into 2 or 3 pieces. I didn't realize this until I was just about to simmer it, but I had bought 3 filets! Julienne the ginger.
2. Put the A) ingredients into a large pot and bring to a boil. Add the sole and the ginger. Bring the heat to medium-low, cover with a lid, and let it simmer. Occasionally, scoop the liquid over the fish with a spoon.
3. When the liquid has decreased and a shine has formed, it's done.
