Hyuga-meshi Rice Dish

This is a regional specialty from Ehime Prefecture. A luxurious and delicious rice dish using leftover sashimi. The staff at the shop where I ate this described it as "raw egg with sashimi over rice."

Ingredients: 2 servings

Sea bream sashimi
2 servings
Soy sauce
1 1/2 tablespoons
Sake
1/2 tablespoon
Mirin
1/2 tablespoon
Eggs
2
Finely sliced green onion
As needed
White sesame seeds
As needed
Plain cooked rice
2 servings

Steps

1. Cut the sashimi into easy to eat sizes. Marinate in a mixture of soy sauce, sake, and mirin for 30 minutes (mix occasionally to marinate evenly).
2. After 30 minutes, add a beaten egg, mix, and let rest.
3. Add finely sliced green onion (leave some to sprinkle on top) and the white sesame seeds, and mix.
4. Pour everything from step 3 including the sauce over piping hot rice, sprinkle chopped green onions, and serve.
