Cook the frozen udon noodles. Cut the pork and kimchi into bite sizes. Thinly lice the green onion diagonally.
Heat sesame oil in a frying pan and put the pork. Season with salt and pepper and stir-fry until cooked through. Add the kimchi with its pickling brine and stir-fry.
Add the udon noodles and mix roughly. Add the soy sauce and mayonnaise and fry. Add the green onion and cook quickly. Transfer to a serving dish. Place a poached egg on top and garnish with sesame seeds.
Story Behind this Recipe
I added udon noodles to stir-fried pork and kimchi (which I love) to create a stir-fried udon noodle dish. It's topped with a poached egg, another of my favorites.
It's better not to cook green onion for too long. If you can't get frozen udon noodles, just use ready-cooked or dried ones. I like using garlic chives with this dish. It's especially delicious if you mix in a soft-poached egg, so definitely try it out.
