Vietnamese Salad with Vinegared Carrots and Daikon

Vinegared carrot salads are common all over Asia. In South Asia they accent it with chili. In Vietnam, they use it as a sandwich filling.

Ingredients: 4 servings

Daikon radish
150 g
150 g
a small amount
○Rice vinegar
3 tablespoons
2 tablespoons
○Fish sauce
1 tablespoon
○Chili (Chili pepper)


1. Finely slice the daikon and carrot into 5 cm pieces. It's easy if you use a grater.
2. Combine the daikon and carrot. Sprinkle with salt and rub in well. Leave for 10 minutes until they have softened.
3. Once softened, squeeze out the water well.
4. Combine the ○ ingredients well and add to the vegetables. Place into the refrigerator for 15 minutes to allow the flavors to blend.

This sweet vinegary filling was in a sandwich that I had in Vietnam!!
I was quite surprised but it actually went really well with the baguette...
