Buttermilk & Apple Cornbread

Buttermilk & Apple Cornbread

This cornbread allows you to savor the acidity of buttermilk, the sweetness of apples, and the texture of cornmeal all in one bite. Enjoy topped with honey and butter or with maple syrup and butter!

Ingredients: 20 cm loaf

1 cup
1 cup
4 tablespoons
Baking powder
1 tablespoon
1/3 cup
Egg whites
2 large
1 cup
Cinnamon powder
1 teaspoon

1. Preheat the oven to 200℃ (400°F.) Lightly grease the pan with butter. Combine the cornmeal, flour, sugar, baking powder, and cinnamon powder in a bowl. In a separate bowl, combine the applesauce, egg whites, and buttermilk.
2. Add the powdered ingredients to the wet ingredients and mix until just combined. (Don't completely mix!) Pour the batter into the pan and bake for 25 minutes in the oven. When a skewer poked into the center comes out clean, it's done. Divide into 12 portions and optionally top with honey + butter, or maple syrup + butter.
3. If you can't get a hold of applesauce, you can puree apples for similar results.
