Tofu Hamburger Steaks

Most tofu hamburgers steaks tend to use chicken.
I wanted to make my own with just tofu and vegetables.

Ingredients: 2 servings

Firm tofu
1 block
Shiitake mushroom
2
Japanese scallions
1/2
Ginger
1 chunk
Katakuriko
a pinch
Salt, pepper
a pinch
Soy sauce, sake, mirin, sugar
to taste
Vegetable oil
a small amount

Steps

1. After heating the tofu in the microwave for about 3 minutes, drain out the water using a flat dish as a weight. Press out excess water using a kitchen towel, then crumble the tofu.
2. Finely chop the shiitake mushrooms, onion, and ginger. Sauté them in vegetable oil, then mix with the tofu, salt, pepper, and katakuriko. Form into patties.
3. Using a little bit of vegetable oil, brown both sides of the burger over medium heat. Serve with teriyaki sauce to taste.

Story Behind this Recipe

As noted earlier, most tofu hamburgers use chicken or eggs, so I wanted to make vegetarian hamburger.
