Pork Soup Style Substantial Miso Soup with Sweet Potatoes

This is a comforting miso soup that's chockfull of vegetables and makes you full and satisfied!

Ingredients: 3 to 4 servings

Sweet potato

Taro root
10 small
Dried shitake mushrooms

Carrot
1/2
Konnyaku
1
Tofu
1 (small)
Daikon radish
About 2cm
Pork (offcuts)
About 100 g
Miso
About half of a ladle
Shichimi spice
as needed
Water
3 cups (600 ml)
Dashi stock
1 packet

Steps

1. Cut sweet potato, carrot, konnyaku, daikon radish, tofu, and taro root into bite sized pieces. Rehydrate the dried shitake mushroooms and slice.
2. Heat water and dashi stock in a pot. Add the vegetables and pork. Skim the scum off.
3. When vegetables have cooked through, dissolve in the miso.
