Cucumber Tossed with Ginger Miso in 5 Minutes

This is a nice way to enjoy a single cucumber.


2 teaspoons
Grated ginger
to taste
1 teaspoon
Sesame oil
a small amount
Red chili pepper
a small amount


1. Peel off the skin from the cucumber in random places. Cut into bite-sized pieces, then put them in a plastic bag.
2. Alternatively, after peeling the skin, put the cucumber in a plastic bag, then break it up with your hands. Then, pound it with a rolling pin or similar utensil until it breaks up into bite-sized pieces.
3. Add all of the seasonings to the plastic bag.
4. Work in the seasonings by massaging the bag from the outside, then let it sit for 2-3 minutes. Once the seasonings blend in, transfer to a dish, and garnish with slices of red chili pepper. Serve immediately.

Story Behind this Recipe

Since I don't really like pickles, I came up with this side dish as an alternative.
