Easy but Amazing Lychee & Coconut Pudding

This is a slightly grown-up tasting coconut pudding using coconut liquor. Lychee goes well with jiggy pudding! This is an original, elegant desert in our house. If you like the taste of coconut, definitely give this a shot.


700 ml
Lychee (canned)
1 can
Coconut milk
50-70 ml
Light brown sugar
30 g
10 g
Water to dissolve the gelatin
6 tablespoons


1. Put the gelatin in the water and microwave for 40-60 seconds to dissolve.
2. Heat the milk and add the sugar and dissolved gelatin. Once the sides of the pot start to bubble, remove from heat.
3. Add the coconut liquor, mix, then transfer to a container. Once it's cooled, put it in the refrigerator to chill and set.
4. Once it's set, transfer the pudding to a dish. Cut the chilled lychee and pour over the pudding together with the canned liquid, and it's done.

Story Behind this Recipe

In our home in Hawaii, our favorite dessert is lychee and coconut pearl tea! Since I had a lot of milk in the fridge I used liquor to make a simple pudding, recalling that flavor. This is the best dessert to have after a meal in the summer. Definitely give it a try!
