You can easily make goma dofu (sesame tofu) with kanten. Eating it as an appetizer before a meal can make you feel fuller, so it's effective for dieting. Using kanten instead of kudzu powder reduces both calories and preparation time.
Ingredients: enough to fill a 15 x 15 cm square mold
Put the dashi stock in a pot and add the powdered kanten. Dissolve the kanten.
Put the sesame paste in a bowl and pour in the mixture from Step 1. Mix well.
Heat the soy milk in a pot and add the mixture from Step 2. Bring to a boil over low heat, stirring to prevent lumps. When it's well mixed and bubbles start to form around the edges of the pot, remove from heat.
Immediately place the pot over cold water to cool and stir until thickened.
After the mixture thickens, pour it into a mold and chill in the refrigerator.
Cut into desired sizes and serve with wasabi.
