Chocolate Chip Oatmeal Cookies

Oatmeal cookies that are hard and crispy on the outside, and soft and squishy on the inside – just like cookies should be. Anytime I make a batch of these they're gone within 2 hours!

Ingredients: roughly 20 cookies

Plain flour
150 g
Baking powder
1 teaspoon
Unsalted butter
175 g
Soft, dark-brown sugar
100 g
Granulated white sugar
100 g
Large eggs
1
Vanilla extract
2 teaspoons
Rolled oats
250 g
Good-quality dark chocolate
75 g

Steps

1. Preheat the oven to 190°C. Grease and line two baking sheets. Bring the butter and egg to room temperature. Chop the dark chocolate into chunks.
2. Sift the flour and baking powder into a large bowl, and mix to combine.
3. Take another large bowl, and put in the butter and sugars. Use a hand-held electric whisk to cream together until light and fluffy. Add the egg, and whisk in to combine. Add the vanilla extract, mixing in with the whisk on a low speed or else with a wooden spoon. Gradually mix in the flour until combined. Stir in the oats and chopped chocolate.
4. Drop rounded tablespoons of the dough onto the baking sheets. Leave plenty of space between them as they will spread during baking. Press down gently on each cookie with the back of a spoon to flatten. Baking for 12-15 minutes, until golden.
5. Transfer to a wire rack to cool, or enjoy hot out of the oven (they'll be a bit crumbly, but taste AMAZING!).

Story Behind this Recipe

Being a bit of an oat addict (seriously, I don't know what I would eat for breakfast if I ran out of porridge oats) I wondered if I could take my staple chocolate chip cookie recipe and improve it a bit... and since oats are considered healthy I guess you can feel less guilty about eating the whole batch in one go... maybe?
