Easy Gazpacho

Easy Gazpacho

Gazpacho is a tart and refreshing chilled soup from Spain. It can easily be made in a blender.

Ingredients: 4 servings

Tomato (very ripe)

Garlic
1 clove
Onion
1/8
Red bell pepper
1/4
Cucumber
1/2
Celery (optional)
Roughly 5 cm
White wine vinegar
From 2 tablespoons
Extra virgin olive oil
From 2 tablespoons
Water
50 ml
Baguette (optional)
Roughly 5 cm
Salt
To taste
For toppings
Red or yellow bell pepper
Green peppers
Cucumber
Onion
Prosciutto

Steps

1. Remove the skin from the tomatoes by blanching it, and cut all of the vegetables into chunks.
2. Add all the ingredients except for the water and salt to the blender and mix. Add water if needed and season it with salt. Once the soup is chilled, it's done.
3. Add toppings according to your preference. Bon Appétit!
