Cappellini Style Chilled Chinese Noodle Sauce

This is a chilled cappellini style dish using Chinese noodles. This chilled Chinese noodle dish is made with tomatoes grown during the long days of summer. It's filled with tomato juice.

Ingredients: 2 servings

Chilled Chinese Noodles:
Chinese noodles
2 bundles (2 servings)
Canned tuna
1 can (70-80 g)
Onion
1/4
Cucumber
1
Sliced lemon
2 slices
*Tabasco
to taste
Cappellini Style Chilled Chinese Noodle Soup:
Tomato

1/2-1 clove
Parsley (finely chopped)
1 tablespoon
White wine vinegar (or rice vinegar)
1-2 tablespoons
Lemon juice
1 tablespoon
Honey
1 tablespoon
Consommé soup stock granules
1 tablespoon
Salt
1/3 teaspoon
Coarsely ground black pepper
to taste
Boiling water
3 tablespoons
Tomato juice (or water)
150 ml
Extra virgin olive oil
1/2-1 tablespoon

Steps

1. [Cappellini-style noodles] Dissolve the consommé granules in hot water.
2. Combine with the remaining seasonings, the tomato juice and lemon juice. You can adjust the amount of honey and vinegar to suit your taste.
3. Add the grated garlic, chopped tomatoes, finely chopped parsley, and the olive oil to the tomato juice. Season with salt and place in the refrigerator to chill.
4. [Chilled Chinese Noodles] Thinly slice the onion and soak in water. Squeeze out the water and then add the tuna and set aside.
5. Peel and julienne the cucumber. I peeled the skin because of the nice coloring and texture, but you don't have to.
6. My family loves lots of ingredients. Since the dish looks a little sad if you can see the noodles, I hide them with the cucumbers.
7. Top the cucumbers with the onion and tuna mixture. Cover with lots of the soup. Garnish with a slice of lemon for a refreshing taste. Optionally add some Tabasco sauce.
