Oil Spaghetti with Dried King Oyster Mushrooms

I made this dish using dried king oyster mushrooms which have a nice flavour and texture instead of using expensive porcini mushrooms. It's as good as the one with porcini mushrooms.

Ingredients: 2-3 servings

Dried king oyster mushrooms (Recipe ID: 2593732)
180-200 g
Onions (finely chopped)
Garlic (finely chopped)
1-2 cloves
Salt (rock salt, etc)
as needed
Coarsely ground black pepper
to taste
Soy sauce
1 tablespoon
Red chili peppers
Water for rehydrating the king oyster mushrooms
100 ml
Extra virgin olive oil
2-3 tablespoons


1. Rehydrate the dried king oyster mushrooms (Recipe ID: 2593732) in lukewarm water.
2. Tear them up by hand without squeezing the water out.
3. Add the finely chopped garlic, olive oil, and deseeded red chili peppers into a frying pan, then turn on the heat.
4. When the garlic changes its colour and becomes fragrant, add the finely chopped onion.
5. When the onion becomes translucent, add the dried king oyster mushrooms, and stir-fry.
6. Add the water from rehydrating the dried king oyster mushrooms, salt, and soy sauce. Shake the pan to emulsify.
7. Add the cooked spaghetti, and quickly mix with the sauce. Sprinkle with coarsely ground black pepper.
