Cut the kabocha into bite-sized chunks, place in a heatproof dish, add a little water, and microwave at 1000 W for 5 minutes. Adjust the time according to your microwave.
While waiting for it to cook in the microwave, cut the sausages and cheese into chunks the size of your beans.
When the kabocha is easily pierced with a skewer, drain the water and mash while still hot.
Mix with the mayonnaise, then mix in the other ingredients. It's done!!
Story Behind this Recipe
I received a lot of kabocha, so I wanted to make something similar to potato salad. I added ingredients which I and my kids love.
Microwave the kabocha until you can easily pierce it with a skewer. Adjust the time according to your microwave. If the mayonnaise seems to make the kabocha too watery, reduce the amount a little. If there's too much moisture, it will become sticky (>_<)
