Minced Chicken Cutlets with Brussels Sprouts

These minced meat cutlets are substantial but healthy as they are made with minced chicken.

Ingredients: Makes 10-15

Brussels sprouts
10-15
Minced chicken
450 g
Onion

Egg

Panko
1 cup
Salt
to taste
Pepper
to taste
For the breading:
Plain flour
as required
Beaten egg

Oil for deep-frying
as required

Steps

1. Score a crisscross at the bottoms of the Brussels sprouts and blanch until tender.
2. Chop the onion.
3. Combine the chopped onion, minced chicken, panko and egg in a bowl and mix well. Season with salt and pepper.
4. Wrap the Brussels sprout with the mince mixture.
5. Dust them in the flour, dip into the beaten eggs and roll in the panko. Deep-fry in the oil heated to 170-180˚C until golden brown.
