Spring Cabbage & Soy Milk Pasta

This is a delicately flavored, creamy pasta dish with soy milk and miso sauce. The sauce brings out the sweetness of the spring cabbage.

Ingredients: 1 large serving

Uncooked pasta
80 g
Chopped spring cabbage
50 g
Bacon
2 slices
@ Soy milk or milk
70 g
@ Awase miso
a generous 1/2 teaspoon
Salt
a dash
Soy sauce
a dash
Black pepper
a dash

Steps

1. Combine the @ ingredients and set aside. Boil the pasta according to the package instructions.
2. Slice the bacon as you like. Add olive-oil to the pan (not listed in ingredients above), and stir-fry the bacon with the chopped cabbage. Season lightly with salt.
3. Add the @ ingredients to the frying pan, and bring everything to a boil. Then, turn up the heat and add the boiled pasta. Quickly mix everything together, and season with soy sauce.
4. Transfer the pasta to a serving dish and garnish with black pepper.

I was trying to think of a quick lunch that I could make in a flash. This recipe doesn't use heavy cream, so it's quite healthy.
