Easy Simmered Bite-Sized Koya Dofu

Chock full of nutrition, I present koya dofu made easy, and delicious!

Ingredients: 4 servings

Dashi stock
500 ml
Bite-sized koya dofu
20 cubes
Sugar
1 tablespoon
Mirin
2 teaspoons
Soy sauce
1 1/2 teaspoons
Carrot
1
Shiitake mushrooms
2
Japanese leek
1/2

Steps

1. Combine all of the liquid ingredients with the dashi broth and heat.
2. When it reaches a boil, add the koya dofu, carrot, and shitake mushrooms.
3. Simmer for 5 mintues, add the leek and continue to simmer for 10 minutes. It's ready when there's just a bit of liquid remaining.
