Egg and Dairy-free Easy Cupcakes

These are healthy cupcakes that require no eggs or butter. They're easy to make, so kids can help out too.

Ingredients: 6 cupcakes

Pancake mix
200 g
Rice milk (or soy milk)
200 ml
Oil (Canola or olive oil)
2 1/2 tablespoons
Soft light brown sugar
1-2 tablespoons
Vanilla extract
2-3 shakes


1. Put all of the ingredients into a bowl and mix together.
2. Pour into the cupcake molds and bake for 20-25 minutes in a preheated 180℃ oven.

Story Behind this Recipe

My 3 year old son wanted to eat some cupcakes, but I needed to make something that my 1 year old daughter could eat too! These came out fluffy, moist, and delicious.
