Soup with Soft Cabbage and Fluffy Tofu

You'll love the fluffiness of the tofu in the soup. The garlic in it will get your appetite going!

Ingredients: 2~3 servings

1/8 to 1/4
1 to 2 cloves
Tofu (I recommend silken)
150 g
Olive oil
1 tablespoon
500 ml
Soup stock cubes
a small amount
Olive oil, grated cheese, black pepper
as desired


1. Mince your garlic and onions, and cut your cabbage into 1 cm squares.
2. Break your eggs into a bowl, and place in the tofu (there's no need to press any of the extra moisture out of it. Mix everything together with a whisk or similar.
3. Start heating the olive oil, garlic, and onions in your pot over a low-medium heat. Wait until your onions are transparent, then add the cabbage.
4. Once the cabbage has softened, add in the water and soup stock cubes. Simmer for 15~20 minutes.
5. Turn up the heat and let boil for a while, and add your tofu and eggs from Step 2. Stir gently. Then, turn down the heat a little and simmer gently for 1 minute or so. Adjust with salt to finish.
6. Drizzle in some olive oil, grated cheese, and black pepper to your preference. I recommend adding plenty of black pepper.
