Potato Salad with Greek-Style Yogurt

I wanted to slightly change the taste of potato salad and added in some Greek yogurt. This is a natural tasting salad that makes a fantastic side dish or tasty addition to your lunch box.

Ingredients: 4 servings

as needed
as desired
Strained yogurt
200 g
Salt and pepper
a small amount
Lemon juice
a little
Corn kernels
as desired


1. Make some Greek-style yogurt and leave it to drain overnight. To do this, simply wrap some plain yogurt in a clean cloth, tie the top and keep it in a bowl.
2. Cut the vegetables into bite-sized pieces. Shred the carrot with a peeler.
3. Sprinkle some salt into boiling water and boil the potatoes.
4. Once soft, mash the potatoes up with a masher.
5. Mix the ingredients from Step 2 and the mashed potato together.
6. Then add in the Greek yogurt.
7. Mix everything together and season with salt, pepper and lemon juice.
8. Serve the salad in a bowl. It looks nice if you scatter chopped parsley (etc.).

Story Behind this Recipe

Potato Salad is usually made with plain yogurt or mayonnaise but I decided to give Greek-style yogurt a try this time.
It resulted in a smooth and zesty potato salad.
