Speedy Side Dish! Bok Choy and Egg Stir Fry with Ginger

It's a Chinese stir fry with a nice ginger flavour. It's a quick and handy side dish.

Ingredients: 4 servings

Bok choy
2 bunches
Eggs
2
Ginger (julienne)
1/2 thumbtip's worth
Chicken stock powder
1/2 teaspoon
Water
2 tablespoons
Salt
a small amount
Pepper
a small amount
Vegetable oil
as needed
*Sesame oil (optional)
1/2 teaspoon

Steps

1. Wash the bok choy well, and cut into 3 even lengths. Cut the bottom parts into 6-8 even pieces. Julienne the ginger.
2. Beat the eggs, add a small amount of salt, pour into a frying pan with heated vegetable oil, and stir. Remove from the pan while they are still halfway cooked.
3. Add a little bit more oil into the same pan, and add the ginger as well. When fragrant, add the bok choy, and stir-fry over medium heat.
4. When the boy choy is coated with the oil, add the chicken stock powder and water. Cover with a lid, and steam-fry for about 1 minute.
5. Remove the lid. Return the Step 2 eggs to the pan and mix quickly. Taste it and adjust the flavour with salt and pepper. Swirl in the sesame oil at the end if you like.
