Macrobiotic Cocoa & Banana Muffin

You can make a macrobiotic cocoa (chocolate) and banana muffin simply with cocoa powder. This recipe doesn't use any eggs or dairy products. It does make delicious and healthy muffins, though.

Ingredients: 6 muffins

Banana (preferably ripened and organic)
2 (approximately 250 g)
Wheat flour
90 g
*Whole wheat flour
50 g
*Beet sugar
2 tablespoons
a pinch
* Baking powder (aluminium-free)
1 and 1/2 teaspoon
*Cocoa powder
3 tablespoons
Canola oil
50 g
Oatmeal (optional)
a handful
Unflavored soy milk
100 ml
If you don't have wheat flour or whole wheat flour, substitute with 140 g cake flour


1. Preheat the oven to 180°C. Mash 200 g of the banana and slice the remaining banana into 12 rounds.
2. Combine the ingredients marked with * in a food processor together with the canola oil and blend until it becomes crumbly. If you're not in a hurry, feel free to sift the ingredients in.
3. Transfer the mixture from Step 2 into a bowl and mix in the oatmeal. Finally add the soy milk and mashed banana and mix gently.
4. Line the muffin tins with glassine paper cases and pour in the mixture. Top with the banana slices and bake for 30 minutes.

Story Behind this Recipe

This is a variation of my own healthy recipe for "Macrobiotic Banana Muffins" (Recipe ID: 1739895) that I made for Valentine's Day by adding cocoa. They're so healthy and the richness of the cocoa goes really well with the sweetness of the banana. It's a simple recipe, so give it a try!
